COOKING METHOD
Boil noodles till al-dente (almost fully-cooked). While the noodles are cooking, prepare the sauce.
Finely chop garlic. Cut zucchini into thin strips or grate in on the mandoline.
Add olive oil in a pan and heat on medium. Once hot, add garlic and cook for one minute, constantly stirring to avoid burning. Add zucchini strips, season with salt and pepper to taste, lower the temperature and cook on medium-low for 5 minutes or until softened.
Then add lemon zest and lemon juice, following with finely chopped parsley. Add in the noodles and mix it with veggies. Transfer the noodles onto a plate, add sardines on top together with halved cherry tomatoes.
