COOKING METHOD
Cook the couscous according to the instructions on the package.
Cut the tomato in half crosswise, remove and discard the seeds and dice the flesh. Finely chop the onion.
Sautee the onion in 2 tbsp of olive oil until soft, then add diced tomato and cook for another minute.
Season with salt and pepper to taste.
Finely chop the herbs.
Remove sardines from the can and divide into pieces.
Fluff the couscous with a fork, squeeze in the juice of half a lemon, pour in a tablespoon of olive oil, season with salt and pepper, add chopped herbs and mix.
Then add the onion, tomatoes and fish to the couscous and mix gently.
Serve garnished with herbs.
